A Big Shock

Enrrique lives in Chula Vista, California. He grew up eating Mexican dishes like tamales and enchiladas.

But when Enrrique was 7, he found out that he has type 1 diabetes (die-uh-BEE-teez). The disease prevents his body from making insulin. Insulin controls the level of sugar in the blood.

Managing diabetes can be a lot of work. Enrrique worried that his life would never be the same.

“It felt like my world was falling apart,” he explains.

Spreading the Word

But then Enrrique and his mom had an idea. In July 2022, they created a social media account called the Diabetic Superkid. Enrrique started sharing videos about what it’s like to live with diabetes. He wanted to teach people about the disease. One of the biggest challenges is figuring out how certain foods affect his blood sugar.

Enrrique didn’t want to give up the dishes he loves. So he put on an apron and got to work. With his mom’s help, he learned to make versions of his favorite meals that are safe for him to eat.

Before long, Enrrique started posting videos of himself cooking. He films the tutorials in his family’s kitchen. Today he has hundreds of thousands of followers on social media.

Celebrate Hispanic Heritage Month

People in the United States celebrate Hispanic Heritage Month from September 15 to October 15. It’s a time to honor the traditions of people whose families are from countries where most residents speak Spanish. More than 65 million people in the U.S. are Hispanic.

Why do we celebrate Hispanic Heritage Month during this time? Because it’s when many nations celebrate their independence. For example, Mexico’s Independence Day is September 16. On that day in 1810, Mexico began its 11-year fight for freedom from Spain.

Honoring His Family

Enrrique’s videos do more than teach viewers how to cook Mexican cuisine. They also honor his roots. Enrrique’s family is from Tijuana (tee-HWAH-nah), Mexico. His great-grandmother Nana Toña still lives there. Many of his cousins do too. Enrrique loves to visit—and eat meals made by Nana Toña.

“I feel connected to Mexico whenever I go,” he explains.

Nana Toña passed down her recipes to Enrrique. He’s proud he can share them with the world. But there’s something else he enjoys even more.

“My favorite moment of every video is the end, when I get to eat the food I made,” he says.

Keep Cooking

Enrrique tries to post at least one cooking video each week. It’s not always easy. After all, he has to juggle school and soccer practice too.

Enrrique’s dream is to one day open a restaurant with a soccer theme. For now, he’s working on perfecting more of Nana Toña’s recipes. He also hopes to encourage kids to celebrate their own traditions.

“If your family has something special that they do, you can pass it down,” Enrrique explains. “If I can do it, then so can you.”
